Tres Leches (Spanish for 3 Milks) is a dense, incredibly moist Sponge Cake that is soaked in a mixture of 3 different kinds of Milks. The Cake is then typically topped with Whipped Cream and sometimes garnished with fresh Berries. This is a super delicious and melt in mouth take on the original one with the addition of everyone's favourite - Chocolate. This Chocolaty version is also equally popular amongst all the lovers of this beautiful Cake. And Chocolate lovers would certainly vouch for this lip-smacking version. The whole process remains the same just with the addition of Chocolate as an extra ingredient. That's it.

Unlike traditional Cakes, a Tres Leches sponge is typically made without heavy Butter or Oil. And instead relying more on whisked Eggs for it's rise and light texture. The 3 different milk mix gives the Cake it's soft special texture that just melts in your mouth. It's the most simplest and the easiest Dessert that can be whipped up on special occasions and festivals. I treated my family and friends with this super moist, beautiful looking sponge cake on Bakra Eid. The traditional Sheer Khurma wasn't made due to the hot weather. And instead chose this and other baked Desserts for the Eid celebrations.

Ingredients

25-30 minutes
8-10 servings
  • For the Chocolate Sponge -
  • 1 1/4 cupsAll Purpose Flour or Maida
  • 1/4 cupCocoa powder
  • 1 tspBaking powder
  • 5Eggs
  • 1 cupSugar
  • 1/4 tspSea Salt
  • 1 tbspVanilla essence
  • 1/2 cupMilk
  • For the 3 Milk Soak -
  • 1/2 cupmelted Chocolate
  • 1 canEvaporated Milk
  • 1 canCondensed Milk
  • 1 cupWhole Milk
  • For the Whipped Cream -
  • 400 mlchilled Whipping Cream
  • 1 tspVanilla essence
  • 2-3 tbspPowdered Sugar

Steps

25-30 minutes
  1. 1

    Whip egg whites and yolks separately with sugar to incorporate maximum air volume. Next is to gently fold them with flour, cocoa powder and baking powder. Bake until golden.

    Allow the baked cake to cool slightly. Then pierce it repeatedly all over using a fork, skewer or a chopstick.

    Whisk the condensed, evaporated and whole milks together with the addition of melted chocolate and slowly pour the mixture evenly over the entire surface of the cake.

    Cover and refrigerate for at least 4-5 hours or better still overnight to let the liquid fully distribute through the crumb.

    Spread fresh chocolate whipped cream over the top just before serving finishing it off with sliced berries. Or as is. Enjoy!
