Brinjal /Eggplant is not always a favorite among all the people because of its slightly bitter taste but when prepared in a spicy way, it can taste great. This is a side dish for rice but will also taste good with chapati.

Preheat oil in pan and add sliced onions to it. When onion turns golden brown, add red chillies and chopped tomatoes to it and stir fry. Grind the above mixture in a mixer grinder.

Again preheat oil in a pan and add mustard seeds to it. When it splutters, add red chillies and the paste prepared earlier to it.

Add diced brinjal to the above paste. Add salt, turmeric powder, red chilli powder and curry masala and stir fry till it is cooked.
