Jam Filled Butter cookies

The cookie making spree at my house has been absolutely fun and exciting! The amount of flour, sugar, butter and eggs bought has risen drastically this month, but its Christmas and its an incredible season, so we are out there celebrating it to the max. As promised, I am going to be blogging about all the different yummies I am baking, so kick starting are these delicious jam filled butter cookies. I love how easy they are to make and they just taste great. It's definitely not considered as a christmas cookie, but fits in well with the rest of the Christmas cookies that I have made and they look pretty

Ingredients

  • 3/4 cupButter : , softened
  • 1/2 cupWhite Sugar :
  • 2Egg yolks :
  • 1 3/4 cupsAll purpose flour :
  • 1/2 cupFruit preserve :
  • 190 CPreheat the oven to

Steps

  1. 1

    Cream together the butter, sugar and egg yolks

  2. 2

    Add the flour a little at a time, until a soft dough forms

  3. 3

    If the dough is soft, stick it in the fridge for 15mins or so

  4. 4

    I didn't have to, so hopefully you don't have to either!

  5. 5

    Roll the dough into 1 inch balls and place the balls 2 inch apart on a cookie sheet

  6. 6

    Using your finger make a well in each cookie

  7. 7

    Fill the hole with 1/2 teaspoon of preserves - I went with some Apple and Rhubarb preserve

  8. 8

    Bake for 8-10 mins until it is golden brown

  9. 9

    I would suggest lingering by the oven, cause they bake quite fast and you don't want them to burn!

    Cool on wire racks before biting into one

  11. 11

    Store in an air tight container

  12. 12

    Dusting some icing sugar on this will make it look pretty too
