Presenting to you ... one of our favourite veggies - Okra / Ladies Finger / Bhindi . You can fry it until it is nice and crispy and serve it as a side dish or you can cook it with some lentils and serve it as a curry with rice. Since I have tried them both, I decided to go with a dish of my own. Sometimes my experiments surprise me (in a good way) and I don't know if these recipes actually exist. K was impressed with the outcome, so he ate the left overs the next day without sharing it with me! :)

Ingredients

  • Okra - washed and cut (3 pieces per okra)
  • 1Onion - medium diced
  • 2Tomato - medium
  • 2Green chillies - slit lengthwise
  • 1 tbspGinger Paste -
  • 1 tbspGarlic Paste -
  • 1/4 tspMustard Seeds -
  • 1/2 tspCumin Seeds -
  • 1Bay leaf -
  • 3cloves -
  • 1/2 inchCardamom - stick
  • 1 tbspGaram Masala -
  • 1/2 tbspCoriander Powder -
  • 1/2 tbspChilli Powder -
  • 1/4 cupCoconut Cream -
  • to tasteSalt
  • Oil

Steps

  1. 1

    In a sauce pan, add the mustard seeds to some heated oil

  2. 2

    When it starts popping, add the cumin seeds, bay leaf, cloves, cardamom, green chillies and the ginger and garlic pastes

  3. 3

    Give this 30secs and add the onions and sauté until the onions are soft

  4. 4

    Add the masala powders and cook until the raw smell of the powders vanish

  5. 5

    The okras and the tomatoes, some water and the required amount of salt and mix it well

  6. 6

    The quantity of water will depend on how much sauce you want out of this

  7. 7

    When the okras are cooked through - should take 15mins or so, add the coconut cream and let it cook for a few minutes

  8. 8

    Serve hot with some rice or rotis

Welcome to my Blog The Eaterspot. My blogging journey began in March 2010. I had just relocated from the US, and living in Wellington, New Zealand was definitely a whole lot different from the US.
