This is my favourite type of soak/saag/leafy veg! My mom taught me how to make it in Bengali style.

After chopping the water spinach, make sure you wash it well. Then let it drain.

Next, in a large wok heat up 3-4 tbsp of mustard oil.

To this, add in the dry red chillies.

Next add in the garlic. After 3-4 seconds, add the onion.

Season with a pinch of salt.

Now on medium heat, sauté everything for 3-4 minutes. The onion should become translucent, but not brown.

Finally add in the water spinach. Mix everything well. The volume of the spinach will gradually reduce.

Keep stirring everything together. Add salt to taste.

Add the sugar.

Add another 2 tbsp of oil. Mix well.

Keep frying the spinach till it comes down to about 1/4th of its original volume.

Taste to check that the spinach does not taste raw. If it does, sauté for another 2 minutes.

Serve hot, paired with plain white rice.
