Ingredients

2-serving
  • 4corn tortillas
  • 2eggs
  • 1/4 cupSauce El Pato
  • Media Crema (Mexican table cream, like sour cream)
  • Queso Fresco Cheese or   Shredded
  • 2 tbsButter

Steps

  1. 1

    Heat butter in pan on medium head, add tortillas.  I like to hand tear them into squares.

  2. 2

    Continue sauteing until the tortilla strips start turning crispy but don't let them brown.  I cook them for about 10 minutes.

  3. 3

    Add two eggs, beaten, to tortilla strips, continue cooking.

  4. 4

    When egg is cooked throughout, add tomato sauce, salt and pepper

  5. 5

    Top with cheese and turn off.

  6. 6

    Serve with media crema and I can't have this meal without ketchup.
