Pressure Cooker Pal Payasam (Rice pudding)

This is a very easy tasty recipe which turns out very light pinkish in color finally. The flavor reminds of delicious palpayasam from Ambalapuzha temple , Kerala.
You don’t get that pink hue in the conventional method of preparing payasam; however hard you may stir it and condense it. But on the other hand, upon pressure cooking, you would get that pinkish creamy texture even without adding a drop of readymade condensed milk.

Put all the ingredients into the pressure cooker and cook until the cooker gives out one whistle. Never fill the cooker more than half at any time as this will make it overflow. Use a bigger cooker if needed.

Lower the heat to minimum and cook for another 25 min Switch off the stove and leave the payasam in the cooker without opening for another half hour.

You may garnish with fried nuts and grapes.
