In a bowl, combine ragi flour, sooji, sour curd, and salt.

Gradually add water, mixing to form a smooth batter.

Let the batter rest for 20 minutes.

Add eno fruit salt and a little water, mixing in one direction.

Grease the idli moulds with oil.

Pour the batter into the greased moulds.

Steam until the idlis are cooked through.

Transfer to a plate and serve with your favorite dip or chutney.I have used imli ki khatti mithi chutney with magaz😋
Tips
Grease the moulds with oil before pouring the batter for easy removal.
