Rotatouille is a traditional French vegetable stew recipe and adding okra to it gives a new flair. It is usually served as a side dish, but may also be served as a meal on its own (accompanied by pasta, rice or bread).

Rotatouille is a traditional French vegetable stew recipe and adding okra to it gives a new flair. It is usually served as a side dish, but may also be served as a meal on its own (accompanied by pasta, rice or bread).

Heat oil in a large pot over high heat. Add garlic, onions,yellow squash and bell pepper. Cook, stirring often, until the vegetables are seared and starting to soften, about 5 minutes.

Stir in okra, tomatoes, water(if needed), thyme, salt and pepper; bring to a boil.

Reduce heat to maintain a low simmer; partially cover and simmer, stirring often, until the vegetables are tender, 15 to 20 minutes. Remove from heat and add basil, oregano,paprika. Serve warm with garlic bread.

Mix butter, cheese spread and minced garlic to form a thick paste.

Apply a thin layer of this mixture on one side of the sliced bread.

Roast the bread over a skillet on medium heat till the bread turns crisp(about 5 minutes)

Serve with Ratatouille!
