Ingredients

  • 1 tablespoonextra-virgin olive oil
  • 1onion medium , chopped
  • 1 poundokra , stem ends trimmed
  • 3tomatoes large
  • 1/2 poundyellow squash , cut into dice 1/4 - inch
  • 1 teaspoon 1/2 teaspoonsthyme chopped fresh or dried
  • 1/4 cupred bell pepper diced
  • 1 teaspoonsalt
  • 1/2 teaspoonpepper freshly ground
  • 1 tsporegano
  • 1 tsppaprika
  • 2 clovesgarlic , finely chopped
  • 1/2 cupbasil chopped fresh
  • 4brown bread cut into halves slices
  • 5 clovesgarlic minced
  • 2 tbspsunsalted butter
  • 1 tspcheese spread

Steps

  1. 1

    Heat oil in a large pot over high heat. Add garlic, onions,yellow squash and bell pepper. Cook, stirring often, until the vegetables are seared and starting to soften, about 5 minutes.

    Stir in okra, tomatoes, water(if needed), thyme, salt and pepper; bring to a boil.

  3. 3

    Reduce heat to maintain a low simmer; partially cover and simmer, stirring often, until the vegetables are tender, 15 to 20 minutes. Remove from heat and add basil, oregano,paprika. Serve warm with garlic bread.

  4. 4

    Mix butter, cheese spread and minced garlic to form a thick paste.

  5. 5

    Apply a thin layer of this mixture on one side of the sliced bread.

    Roast the bread over  a skillet on medium heat till the bread turns crisp(about 5 minutes)

    Serve with Ratatouille!
