Crispy Protein-Rich Soya-Veggie Pakoda

First ready all the ingredients. Boil the soya chunks in water with some salt for 4 minutes. Slice onions,chop other vegetables and ready all the spices,salt and soda. Drain and refresh with fresh water to remove the off smell.

Squeeze out the water. Crush the soya chunks into granules in a chopper.

Transfer into a mixing bowl. Add in the vegetables,dhania, ajwain, chilli powder, amchur, green chillies and salt.

Mix well to release the moisture. Now add in besan in batches as required

Mix and add in pinch of soda. Put little water on the soda.

Mix well to get a well bounded soft mixture. Heat oil for deep fry. Drop pakoras and fry until crispy. Fry first on fast gas and then on medium heat for best results.

Drain off excess oil and serve. Although monsoon is dodging is, I have made Pakoras to remember the rain gods to shower rains on India. Happy cooking 😊!!
