I did this on the stove top I live in Florida temperature on the front screened porch 101° Fahrenheit the oven is going to remain cold. But the microwave does just as good, but cooler. Cool in Florida is a must.

I did this on the stove top I live in Florida temperature on the front screened porch 101° Fahrenheit the oven is going to remain cold. But the microwave does just as good, but cooler. Cool in Florida is a must.

Peel and cube the sweet potatoes. Put into a microwave safe dish cover with a wet paper towel cook a total of an hour. Just be sure it's fork tender. Stir a few times as it cooks. On the stovetop boil the sauce ingredients except cornstarch and 1/3 cup water.

When the sugar dissolves mix the cornstarch and water and add to the boiling liquid to thicken the sauce. Toast the pecans.

Add the pecans, the sauce and mix. Serve I hope you enjoy!!
