Ingredients

  • 4Eggs : hard-boiled
  • 2Potatoes : skinned and diced
  • 1Onion large : diced
  • 1 tbspGinger Paste:
  • 1 tbspGarlic Paste:
  • 2Green chillies :
  • 1/4 tspTumeric Powder:
  • 1/2 tspCumin Powder:
  • 1 tbspCoriander Powder:
  • 1/2 tspChilli Powder:
  • 1/4 tspGaram Masala :
  • 3/4 cupCoconut milk :
  • to tasteSalt
  • Oil
  • Coriander - freshly chopped for garnish

Steps

  1. 1

    Saute the onions, green chillies, ginger and garlic paste in some oil

  2. 2

    When the onions go brown, mix the masala powders in some water: tumeric, cumin, coriander, chilli, and pour into the pan

  3. 3

    Cook this till the spice mix cooks through and gets aromatic

  4. 4

    I cooked the potatoes in the microwave for a few minutes and tossed it into the pan

  5. 5

    Add 1 cup of water, the coconut milk and cook on medium heat

  6. 6

    After a couple of minutes, I added the garam masala and salt and mixed well

  7. 7

    I made slits on the eggs and placed them in the curry

  8. 8

    I made sure they were immersed, so the curry goes into the eggs

  9. 9

    I let this simmer for a few minutes and garnished it with some coriander

  10. 10

    Serve this with some steamed rice

Welcome to my Blog The Eaterspot. My blogging journey began in March 2010. I had just relocated from the US, and living in Wellington, New Zealand was definitely a whole lot different from the US.
