5-Ingredient Peach Parsley Celery Salad (Fat-Free)

Summer-sweet salad with a crispy crunch, serve for breakfast dinner or lunch! ;)
Summertime and the livin' is easy. Let's pretend that last part is true. As the temperature begins to rise, so does stress of college kids preparing for finals. Luckily for me, I have a final every month, all year long. Unluckily for me, I only have one month where I can eat panty-droppin Peaches, and this is that month :)
As a student at Full Sail U, I have class year-round. As a resident of Florida, I'm celebrating the peak of Peach season.
Eating seasonal fruit makes complete sense. Not only economically, but the taste is incomparable. It reminds me of the feeling one must get sticking their head inside of the local Keebler tree, with all of those cute lil' elves working happily on their cookies, except in this case with the gifts of nature.
This salad is:
Summer-sweet
Simple
Crunchy
Mouth-wateringly juicy
This would make the PERFECT hydrating edition to your cookout, barbecue, or for times when you listen to the Bee Gees poolside and sip mojitos. It's also a great compliment to crying yourself asleep whilst wearing a Gumby costume, whatever works for you really.
If you decide to use canned peaches that's ok, as long as you understand the Kool-aid man is going to come to your home, submerge, and drown you with his sweet juices, all inside of his fragile glass vessel.
This salad is abundantly healthy and nurturing without trying to be. Add a pinch of Cayenne and Turmeric for extra fun times ...

Wash produce.
- 2
Slice celery in half length-wise(if you want smaller celery pieces), and then chopped cross-wise. Chop Parsley by cutting into smaller pieces at the stem end and increasing the cut size as you approach the leaves. Dice peaches.

Combine produce in a medium sized bowl, toss with apple cider vinegar and maple syrup. Add optional spices if desired.
