Miso Soup with Somen Noodles

We love the complex flavors miso paste has and it is a seasoning we love in our home. Miso is enzyme-rich and made from fermented soybeans with sea salt and koji. Koji is a fungus the Japanese use to make many fermented products, such as sake, soy sauce, and miso paste.

While waiting for the water to come to a boil, chop scallions and ginger.

Once the water comes to a boil, add miso paste and turn the fire down and bring the water to a simmer. Add the ginger pieces and dry chillis.

Add somen noodles once the miso paste dissolves. Somen noodles cook extremely fast, about 2.5 minutes, 3 minutes tops.

Just before somen noodles are done, add the black sesame seeds and roasted sesame seed oil. Cut the heat and serve. Do not over cook the somen noodles or miso paste. Finish with chopped scallions. http://www.chipotlepotato.com/miso-soup-somen-noodles/
