Steps

Cook vermicelli noodles according to package, then drain and cool.

Cut lettuce, spring onions, cucumber, and tofu into thin strips.

Dip rice paper in water until soft.

Place a little of each ingredient and mint on the rice paper.
- 5
Roll up tightly, folding in the sides as you go.
- 6
Serve with hoisin or dumpling sauce.
