  • 10Rice paper wraps
  • 100 gVermicelli noodles
  • 2 leavesLettuce
  • 2 stalksSpring onions
  • 1/2 pieceCucumber
  • 40 gBean sprouts
  • 100 gFirm tofu
  • 2 tbspHoisin or dumpling sauce
  • 8 leavesFresh mint

    Cook vermicelli noodles according to package, then drain and cool.

  2. 2

    Cut lettuce, spring onions, cucumber, and tofu into thin strips.

  3. 3

    Dip rice paper in water until soft.

  4. 4

    Place a little of each ingredient and mint on the rice paper.

  5. 5

    Roll up tightly, folding in the sides as you go.

  6. 6

    Serve with hoisin or dumpling sauce.
