Khare in Urdu means savoury and this Vermicelli preparation is a specialty of Hyderabad. It is made as a Breakfast mostly on festive mornings. It is made with Kheema or Lamb mince, Yogurt and spices. It is absolutely an awesome treat to your taste buds. And apart from that, this can be relished on any given day for Dinner too. This particular Vermicelli is sold in every big and small bazaars of Hyderabad city called as Kimami Seviyan or Chutte ke Sewaiyan. It is also used for the Sheer Khurma, the most popular festive sweet dish of this Nawabi city.
In this particular version of savoury preparation, one can also add any of your favourite Veggies into it as a variation, thus making it even more healthier for an excellent innovative twist. However this dish is purely a traditional and an irresistible authentic one with the minced meat. Lamb or Beef can be used accordingly. Dig in!

Steps

Roast the vermicelli if it is unroasted until golden brown and keep aside. I have used fine variety of pre roasted vermicelli. Heat oil in a pot or handi.

Saute the onions until done. Add the caraway seeds, cardamom, cinnamon and ginger garlic paste next. Fry all for a few seconds. Also add one or two finely chopped or pureed ripe tomatoes. This is purely optional. One can omit tomatoes altogether.

Now add the green chillies, mince mutton, along with the powdered spices and the salt. Add the well beaten yogurt into it. Cover and cook it on a low flame until the oil starts separating.

After the mince mutton is done, add in the vermicelli. Cover and cook until done. Also add water just about a cup. Water should always be added very carefully keeping in mind that the vermicelli is thin and very fine variety. Cover and cook until it's done and the vermicelli is well cooked and soft. Keep a watchful eye and stir with light hands in between once or twice.

Garnish with freshly chopped coriander and mint leaves and serve hot right away. Yum! Enjoy!
