Roughly crush the peppers. Wash and dice the onion and tomatoes. Chop the utazi leaves. Prepare & grill the plantains and fish.

Heat the palm oil in a clean pan. Add the diced onion, crushed pepper, diced tomatoes, and salt. While you prepare & grill the plantains & fish

Add the seasoning cubes and oil bean. Steam for a further 30 seconds until the sauce comes together.

Plate and sprinkle with the remaining thinly sliced utazi. Serve with roasted plantain and fish.
Tips
Peppers: crush, don't blend. You want texture, not a smooth paste
Palm oil: heat until it's just hot, not smoking, before adding onions. Smoking oil turns bitter
Tomatoes: pat them dry-ish before adding so the sauce doesn't turn watery
