Preheat the oven to 180º fan. Line a baking tray with baking paper.

Place the pepper halves cut side up on the lined tray and drizzle with a little olive oil.

Put the couscous, garlic granules, spices and a generous amount of salt and pepper into a heatproof bowl, pour over the boiling water and mix well. Add a drizzle of olive oil and mix briefly with a fork, then cover with clingfilm and leave to sit for 5 minutes.

Combine the honey in a small bowl with the lemon juice and a little more olive oil, then pour over the couscous and add the dates, parsley and feta, and mix well.

Check to see if it needs more salt and then divide the couscous mixture between the pepper halves - use your hands, as it’s much easier to compress the mixture so that it stays put.

Drizzle with a little extra olive oil and bake for 22 - 25 minutes until brown and charred but not burnt.
