Crumble the leftover roti into fine bits using your hands (or a food processor, which I prefer.

Place a pan on low heat and add oil.Add peanuts and fry them; once fried, temper the oil with mustard seeds, curry leaves, green chili pieces, and asafoetida (hing).

Add the crumbled roti to the pan, keeping the heat low. Add the spices—salt to taste, sugar, turmeric powder, coriander-cumin powder, and Kashmiri red chili powder—and mix everything well. Cook for about a minute, then turn off the heat.

Stir in lemon juice and finely chopped fresh coriander. Transfer the mixture to a serving plate. Zero wastage and healthy with vitamin b12 which provides in stale rotis, particular for pure vegetarians.

Sprinkle *bhujia* (crispy gram flour noodles) over the top. Your delicious breakfast is ready—enjoy it with a hot cup of masala chai.
