In our home, we transform these leftovers rotis into *Roti Chivda*—a savory snack made by crushing the rotis and sautéing them with a tempering of peanuts, curry leaves, and green chilies (and onions, if you like).

📌We add basic spices to make it truly delicious and garnish it with *Bhujia Sev*,lemon juice, and fresh coriander. It turns into a wonderful, tasty savory snack that is best enjoyed with a hot cup of masala chai.

  • 2 tsppeanuts
  • 4curry leaves
  • 1chopped green chilli
  • 1/4 tspasafoetida
  • 1/2 tspturmeric powder
  • 1 tspKashmiri red chilli powder
  • 1 tsproasted coriander jeera powder
  • 1 tspsugar (optional)
  • 1 tsplemon juice
  • 4 tspbhujiya sev
  • 1/2 tspmustard seeds
  • Salt to taste

    Crumble the leftover roti into fine bits using your hands (or a food processor, which I prefer.

    Place a pan on low heat and add oil.Add peanuts and fry them; once fried, temper the oil with mustard seeds, curry leaves, green chili pieces, and asafoetida (hing).

    Add the crumbled roti to the pan, keeping the heat low. Add the spices—salt to taste, sugar, turmeric powder, coriander-cumin powder, and Kashmiri red chili powder—and mix everything well. Cook for about a minute, then turn off the heat.

    Stir in lemon juice and finely chopped fresh coriander. Transfer the mixture to a serving plate. Zero wastage and healthy with vitamin b12 which provides in stale rotis, particular for pure vegetarians.
