Make 2-3 deep diagonal slits across the thick parts of the leg and breast of each quail.

In a large bowl add ginger-garlic paste, chilli powder, garam masala, pepper powder, turmeric, lemon juice, yogurt, cornflour/starch, salt, curry leaves, and Kashmiri red chilli powder. Mix well into a thick, smooth paste.

Add the quails to the marinade and rub marinade thoroughly all over the quails.

Cover and marinate for at least 7-8 hours or overnight.

Heat oil in a wok to 325F/160C.

Gently slide marinated quails into the oil. Do not overcrowd the wok; fry on medium heat for 4-5 minutes per side, flipping occasionally until the exterior turns crispy reddish brown and completely cooked.
