Homemade Bagels

These homemade bagels are chewy, golden, and surprisingly easy to make from scratch. A quick honey and baking soda water bath gives them that classic chewy crust, while the inside stays soft and tender. These homemade bagels are chewy, golden, and surprisingly easy to make from scratch. A quick honey and baking soda water bath gives them that classic chewy crust, while the inside stays soft and tender. Mix warm water and brown sugar in a bowl. Add yeast, flour, and salt. Knead 8–10 min (mixer) or 10–12 min (hand).

Form dough into a ball, place in greased bowl, cover, and let rise 60 min until puffy.

Divide dough into 8 pieces (about 105g each). Shape into balls.

Cover and rest dough balls 10 min.

Poke a hole in each ball, stretch to 1.5–2 inches wide.

Place on parchment, cover, and proof 20–30 min until slightly puffy. Preheat oven to 450°F.

Boil 2 quarts water, add honey and baking soda.

Boil bagels 30–45 sec per side. For chewier crust, boil 60 sec per side.

Place on baking sheet. Brush with egg wash and add toppings as desired.

Bake at 450°F for 18–22 min, rotating halfway, until golden brown.

Cool on wire rack 20–30 min before slicing.
Tips
For a shinier crust, brush with egg wash before adding toppings.
