Wash the sago (sabudana) and soak it in sufficient water for 3–4 hours, or until soft; then, drain off the excess water thoroughly.

Mash the boiled potatoes in a bowl and mix in the soaked sago.

Add the green chilies, and fresh coriander leaves.

Add rock salt (sendha namak), black pepper, Peanut powder and any other optional ingredients, then mix everything well.

Lightly grease your hands with oil. Take portions of the mixture and shape them into small, elongated rolls. Ensure the mixture is not too wet.

Heat oil or ghee in a pan. Fry the rolls over medium heat until they turn golden brown and crispy.

Turning them gently occasionally. Transfer the prepared rolls to a plate and serve hot with green coriander falahari chutney.
Tips
🍴 Soak the sago (sabudana) in water for a sufficient amount of time until it softens.
🍴 Add roasted peanut powder to the mixture to prevent the rolls from breaking apart.
🍴 Maintain the correct oil temperature.
Fry one roll first to test it; if it breaks, add a little more peanut powder or mashed potato to the mixture.
🍴 For a low-oil option: These can also be cooked in an air fryer. Cook them at 180°C for 12–18 minutes, flipping them halfway through.
