HAPPY NAVRATRI
Navratri is a beautiful festival dedicated to the worship of Goddess Durga, celebrated with devotion, positivity, and fasting. During these auspicious days, let’s prepare something sweet and delicious to make our fasting meals extra special.
This Sabudana Apple Kheer is a creamy, refreshing dessert made with tapioca pearls, milk, caramelised apples, saffron, and crunchy dry fruits. Served chilled, it is a delightful treat to enjoy during Navratri fasting!
Steps
- 1
Wash the sabudana thoroughly and soak it in sufficient water for 4 hours.
Dissolve the milk powder in the milk and bring it to a boil. Add the soaked sabudana and cook on a low flame until the pearls turn translucent. Add half of the chopped cashews and almonds along with some saffron strands. - 2
Let the milk simmer until the kheer thickens slightly. Turn off the heat and allow it to cool.
- 3
In a pan, melt the sugar and add the finely chopped apple pieces. Cook until the apples are lightly caramelised. Once the apple mixture cools slightly, add ⅛ cup of cold milk and mix well. Stir this mixture into the cooled kheer. Add the pomegranate seeds, cardamom powder, remaining chopped nuts, and saffron. Mix everything well.
Refrigerate until thoroughly chilled. - 4
Delicious Sabudana Apple Kheer is ready to serve! 😍 Enjoy this creamy, fruity dessert anytime during your Navratri fast.
Tips
1) Soak the sabudana properly to ensure it cooks evenly and becomes translucent.
2) Allow the caramelised apple mixture to cool before adding it to the milk to help prevent curdling.
3) The kheer will thicken further as it cools, so adjust the consistency with a little milk if needed.
4) For the best taste and texture, add the pomegranate seeds just before serving.
