Ingredients

4 servings
  1. 2 clovesgarlic, thinly sliced
  2. 4 Tbspolive oil
  3. 1/2 cupwhite wine
  4. 1 cupheavy cream
  5. 1/4 cuppistachios
  6. 1/4 cupparmesan cheese
  7. to tastesalt & white pepper
  8. 1 handfulchopped parsley for garnish (optional)

  1. 1

    Blend oil and pistachios in a food processor until a chunky paste is formed.

  2. 2

    In a large sauté pan, toast the pistachios and garlic until fragrant. Add white wine and reduce by half, scraping any bits stuck to the bottom of the pan if needed.

  3. 3

    Add heavy cream and bring to a simmer. Stir in the parmesan until melted and sauce has thickened. Season with salt & pepper.

  4. 4

    To serve add to freshly cooked pasta and toss to coat. Add pasta water if necessary to thin out a bit.
