  • Leftover rice-2cups
  • 5 tablespoonsgrated Parmesan cheese
  • 1 tablespoondried parsley or coriander leaves
  • 1/4 teaspoonfreshly ground black pepper
  • 1 teaspoonsalt
  • 2 tbspcornflour
  • Dry breadcrumb-100gm

    In a medium bowl, whisk cheese, parsley, pepper and 1 teaspoon salt. Cover and chill. Mash leftover rice

  2. 2

    Add into the cheesy mixture.add boil peas.Allow rice mixture to cool for 1 hour. Make a thin paste of cornflour.if u eat egg then use eggs.

  3. 3

    Pour breadcrumbs into a pile on one end of a cutting board. Dampen hands and roll rice mixture into 2.5cm balls, then dip in cornflour and coat each one with breadcrumb.

  4. 4

    Add one small piece of cheese and then make balls if u like In a small, deep frying pan, heat olive oil.Fry rice balls 6 at a time, turning often to ensure even browning. Drain on kitchen paper and serve warm.
