In a saucepan over low heat, combine the milk, semolina, and mastic. Stir gently.

Add the sugar, rose water, and orange blossom water. Continue stirring until the mixture thickens. If after 20 minutes the mixture is not thick, add 1 tablespoon cornstarch and stir. You can also add a pinch of vanilla (optional).

Once the mixture is ready, pour it into a serving dish and let it cool, either at room temperature or in the refrigerator.

Spread the cream evenly over the cooled mixture. Garnish with ground pistachios, coconut, or any available topping. Let it chill.

To make the syrup, combine the sugar and water in a saucepan and cook until it thickens to a honey-like consistency. Add a squeeze of lemon juice and rose water. For best results, pour the syrup over each piece when serving.
