Let it chill in the refrigerator for a few hours so it gets cold and the flavors and aromas blend together.
With 2 cloves of garlic, our tzatziki is mild—perfect for tourists! Add more if you like it stronger. My aunt upstairs uses 5 cloves and it's turbo!

Peel the cucumber, remove the seeds, and cut it into small cubes or strips (or grate it). Sprinkle with salt and let it sit for 15 minutes.

Drain and squeeze the cucumber to remove excess liquid.

In a salad bowl, add the yogurt, white pepper, finely chopped herbs, olive oil, minced garlic, and cucumber. Mix with a wooden spoon until well combined.
