Place the peeled and finely chopped tomatoes in a frying pan with their juice, the salt, peppers, oregano, sugar, garlic and butter. Simmer until it absorbs all its liquids and thickens.

Beat the eggs and add them to the tomato together with the feta cheese and the heavy cream. Use a whisk to stir fast and vigorously so that they don't have enough time to solidify and get firm.

Serve them plain or over bread sprinkled with the parsley.
