Place a bay leaf and half cup of vinegar in a pot with boiling water. Then add the cleaned octopus and leave to cook for 15 minutes.

Remove the octupus, cut it into large pieces and place it in the Dutch oven.

Add the oil, the red pepper, a little salt, the finely chopped onion, the finely chopped tomatoes, and one tbsp tomato paste that you have previously dissolved in the red wine.

Cut the potatoes into large wedges and add them in the Dutch oven.

Take 3 cups of the boiled octupus juice, strain it and pour it in the Dutch oven.

Cover with the lid and place in the oven at 200°C for 45 minutes.

Serve.
