Steamed vegetables with crispy Iberian ham

A healthy recipe that I made for dinner yesterday. Vegetarians could of course substitute the ham with crispy parmesan (melt thin slices in the oven on some greaseproof paper then leave to cool so they crisp up). Any seasonal veg will do.

A healthy recipe that I made for dinner yesterday. Vegetarians could of course substitute the ham with crispy parmesan (melt thin slices in the oven on some greaseproof paper then leave to cool so they crisp up). Any seasonal veg will do.

Fill half of the bottom pan with water and put the washed and sliced onions and garlics in. Add a pinch of salt, cover and bring to the boil for 10 minutes. Meanwhile wash and cut the other veg and put in the top steamer. Take the lid of the pan with the onions, cover with the steamer, put the lid on amd continue over a high heat for another ten minutes. By which time contents of both pans will look like this.

Strain the water into a container

You can use it as a delicious oniony stock for a future soup, stew or gravy

Heat a grill or non-stick pan and place the ham slices inside. After 2 minutes over a high heat turn them over to crisp them up

Arrange the vegetables on a large serving plate. Cut the ham into crispy bits

Drizzle with olive oil and soy sauce. Enjoy!! ☺
