Put the banans with their skins intact on a hot grill for 6-8 minutes turning them every so often .until the skin is turned a black colour ,but not burned.

Meanwhile break the cardamon pods and release the seeds,crush them with mortar and pestle.

Split the vanilla pod lengthways scrape out the seeds and mix with the cardamon,orange rind, brandy or juice,muscovado sugar and the butter into a thickish paste.

Use a sharp knife and cut the skin of each banana lengthwise and spoon in some paste .serve straight away witha spoonful of mascarpone or creme fraiche.
