Ingredients

4 servings
  1. 4bananas
  2. 2black cardamon pods
  3. 1whole vanilla pod ( bean )
  4. 4 tbspbutter melted
  5. 1whole grated rind of orange
  6. 2 tbspbrandy or fresh fruit juice
  7. 4 tbsplight muscovado (brown) sugar
  8. 4 tbspmascarpone or creme fraiche to serve
  9. 3green cardamon pods

Steps

  1. 1

    Put the banans with their skins intact on a hot grill for 6-8 minutes turning them every so often .until the skin is turned a black colour ,but not burned.

  2. 2

    Meanwhile break the cardamon pods and release the seeds,crush them with mortar and pestle.

  3. 3

    Split the vanilla pod lengthways scrape out the seeds and mix with the cardamon,orange rind, brandy or juice,muscovado sugar and the butter into a thickish paste.

  4. 4

    Use a sharp knife and cut the skin of each banana lengthwise and spoon in some paste .serve straight away witha spoonful of mascarpone or creme fraiche.
