  • Ingredients
  • 4 tbspcanola oil
  • 1/2 cupcornmeal
  • 1/4 tspcumin
  • 1 tspgarlic powder
  • 1/2 tspblack pepper
  • 1 mediumcarrot or 6 baby carrots-- chopped
  • 2 stalkcelery, chopped
  • 1/2 tspchili powder
  • 1add desired herbs -- basil, cilatro, etc, to taste.
  • 2med, red potatos-- chopped
  • 1 smallonion-- chopped
  • 4 cupstock -- i use chicken
  • 1 can, 10 oz tomato sauce
  • 1 smallcan green chilies-- optional
  • 1 canblack beans, optional
  • 213 oz cans chicken, optional

Steps

30 mins
  1. 1

    add oil to cast iron skillet heat until a sprinkling of water dances

  2. 2

    put cornmeal in skillet, stir until meal is golden in color

  3. 3

    add tomato sauce + 2 cans of water

  4. 4

    add all veg, cook on med heat until tender

  5. 5

    add all spices and seasonings

  6. 6

    add stock, cook for 15 min

  7. 7

    serve hot with crispy tortilla strips

  8. 8

    enjoy!
