Preheat oven 375

Mix all ingredients by hand in bowl. No, you do not use flour for these cookies :-)

Cover cookie sheet with foil for easier clean-up and removal of cookies. Spray light coat of cooking spray on foil.

Either drop teaspoon full drops on foil, or I gently take small amount in hand and roll (gently) and place on sheet.

Spray a fork with spray or you can sprinkle sugar on rounds and using fork press cookies down in criss/cross pattern.

Bake for 12-15 min depending on size of cookie. Cookies are FRAGILE so very gently remove from sheet and let cool.

This is an excellent recipe for those cooking Gluten free and a quick easy snack for the kids.

Substitute splenda if you don't want sugar. Some sprinkle sugar over Precooked and cooked cookies but my kids don't need the extra. Enjoy!
