Ingredients

  • 4 cupdiced fresh or frozen rhubarb
  • 3 mediumonions, chopped
  • 1 cupwhite vinegar
  • 1 cuppacked brown sugar
  • 1 cupsugar
  • 1 1/2to 2 teaspoons salt
  • 1 tspground cinnamon
  • 1 tbsppickling spice
  • 1 can(28 ounces) diced tomatoes, undrained

Steps

  1. 1

    In a large saucepan, combine all ingredients.

    Cook for 1 hour or until thickened, making sure to stir it often so it doesn't burn.

    Cool.

  4. 4

    Refrigerate in covered containers.

  5. 5

    *This recipe makes about 6 to 7 cups.*

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
