Ingredients

  1. 1 lbbeef roast or pork roast
  2. 3 clovegarlic, crushed
  3. 1onion, chopped
  4. 1 largecarrot, peeled and chopped
  5. 2 largetomatos, seeded
  6. 2chopped peppers, jalepeno serrano.. your choice
  7. 3 tbspchili powder
  8. 3 tspsalt
  9. 1 tbspcumin
  10. 1 1/2 tspdried oregano
  11. 1 1/2 tspcoarse ground pepper
  12. 1beef stock

Cooking Instructions

  1. 1

    add all ingredients to a large stock pot, use enough stock to cover the meat

  2. 2

    bring to boil, then simmer 2 hours until beef falls apart

  3. 3

    remove the beef and shred with a fork

  4. 4

    drizzle shredded beef with stock juices until desired moistness achieved, salt and pepper to taste

  5. 5

    * remaining stock juices can be frozen for future use as soup base
