Decided dinner was going to be whatever I cooked in the crockpot tonite, so I rummaged around the pantry and fridge. This is the first time I ever added diced tomato or kidney beans to a beef stew. WOW! I surprised myself with how well it came out and tasted.

Ingredients

8 servings
  1. 1 lbbeef stew meat
  2. 8 smallpotatoes cubed
  3. 1 largeonion chopped
  4. 15 1/2 ozcan of red kidney beans, undrained
  5. 4 ozcan of sliced mushrooms, undrained
  6. 12 ozbag of steamfresh sliced carrots
  7. 14 1/2 ozcan of diced tomato, undrained
  8. Broth
  9. 5beef bullion cubes
  10. 1 1/4 literwater
  11. 2 tspgarlic powder
  12. 1 tbspItalian seasoning
  13. 3 tbspcorn starch
  14. 1Salt and pepper to taste.

Cooking Instructions

    Add all canned contents to crockpot.

    Cut beef stew meat into smaller pieces, add to crockpot.

    Add chopped onion, cubed potatoes and bag of steamfresh sliced carrots to crockpot.

    Heat water with bullion cubes to boil. Put corn starch in a separate cup or bowl. Add some broth to corn starch and stir to make a soupy paste. Add to bullion broth. Stir to mix well. Once thickened to a gravy consistency, add to crockpot and stir, mixing everything evenly.

    Cook on low 8 hrs or on high 4 hrs.

    Add some Grands flakey bisquits on the side with this stew.
