A great omelette for a special breakfast.
Steps

Seperated three eggs put whites into a clean metal bowl and whisk together until light and fluffy but not dry.

In another bowl whisk egg yolks, ham, spring onions, cheese and salt and pepper to taste.

Careful add whites to yolk mixture until none of the white is visible.
- 4
Put oil in a heated frying pan and gently pour mixture in, allow to set on the bottom about 3-4 minutes on a low heat.
- 5
Place part cooked omelette still in the pan underneath a pre heated grill/salamander, cook until the omelette is rising and bubbly golden on top.

Serve with hot buttered toast and a cup of coffee yummie
