Ingredients

12 servings
  • 4large zucchini cut into quarters
  • 2 tbspsalt
  • 1 cupcooked rice refrigerated over night
  • 1 cupgrated carrot
  • 2 cupcheddar cheese grated(mild)
  • 1/3 tspsesame oil
  • 1 1/2 tspparmesan cheese

Steps

  1. 1

    Preheat oven 450°F Fahrenheit scoop out zucchini leaving bottom solid sprinkle a pinch of salt in bottom of zucchini cups

    Mix rice cheese oil and carrots together

  3. 3

    Stuff the zucchini cups

    Spay pan with nonstick spray

  5. 5

    Bake 20 minutes

    Sprinkle top with parmesan cheese
