Italian Stuffed Zucchini

Preheat oven to 350

Scoop out middle of zucchini to make it "boat like". Save some of the zucchini insides.

Baste inside of zucchini with olive oil.

place zucchini inside oven for 10 minutes or until tender.

While that is cooking mix ricotta in a bowl with your choice of marinara sauce. (I used "Classico: Parmesan and Romano" for mine).

Mix basil and garlic salt into the ricotta mixture. I used fresh basil but you can use dry basil and just double the amount.

Take zucchini out of oven and fill with ricotta mixture.

Top with shredded cheese mixture.

Place in oven for 5 more minutes or until cheese topping is melted.
