Ingredients

  • 2 tbspbutter
  • 1yellow onion, chopped
  • 1/4 tspturmeric
  • 2green chillis (choose the heat you like), sliced
  • 2ripe tomatoes, chopped roughly
  • 3 tbspchopped cilantro leaf
  • 2eggs
  • 1 pinchsalt and ground black pepper

    Prepare all the veg and chop the cilantro

  2. 2

    Beat the eggs - to beat them really well, I break them into a clean jar, put the lid on and give them a vigorous shake for 30 seconds

  3. 3

    Melt butter in a cast iron skillet

  4. 4

    Add onions and cook for two minutes on medium heat

  5. 5

    Add turmeric and cook for another minute

  6. 6

    Add the chillis, tomatoes and cilantro and cook for 30 seconds, stirring

  7. 7

    Add the eggs, and cook, stirring for 2 minutes

  8. 8

    Serve on hot buttered toast (optional)
