Combine balsamic vinegar and honey in a saucepan over medium high heat. Bring to a boil

Then simmer for a few minutes until the mixture reduces, becomes syrupy and thickens. Take off heat and put aside

Wash the peaches, slice them in half and remove the stone
- 4
Brush a grill pan with some olive oil and put over high heat. Add the peaches yellow side down and grill the side for 4-5 minutes. Grill only that side then leave to cool

To serve, put some whipped cream or ricotta on the grilled side of the peach and drizzle the balsamic sauce over it
