Ingredients

Serves 4 servings
  1. 2 1/2 cupsall-purpose flour (about 315 grams)
  2. 1/4 cupoil (60 ml)
  3. 1 cupwarm water (240 ml)
  4. Pinchsalt
  5. 4 tablespoonspowdered milk
  6. 2 tablespoonssugar
  7. 1 teaspoonbaking powder
  8. 1 tablespooninstant yeast
  9. Kiri cheese or a mix of cheeses (mozzarella, Kiri, bacon, feta, cheddar, Parmesan)
  10. Chopped parsley for filling with cheese, as desired
  11. Nigella seeds
  12. Sesame seeds
  13. For brushing the dough: 1 tablespoon milk or 1 egg

    Mix the yeast, powdered milk, and sugar, then let sit for 5 minutes in 1/4 cup warm water.

    Add the salt, oil, and sifted baking powder, and mix well.

  3. 3

    Gradually add the flour in stages, kneading well until the dough comes together.

  4. 4

    Place the dough in a warm spot to rise.

  5. 5

    Lightly oil a baking sheet. Shape the dough as you like into balls or half-moons, and fill with your choice of cheese.

  6. 6

    For the filling, use Kiri, mozzarella, cheddar, feta, nigella seeds, and chopped parsley. Sprinkle a little oregano and basil, then top with sesame and nigella seeds. Bake in the oven until golden brown.
