Ingredients

6 servings
  1. 2 tbspolive oil
  2. 1 lbasparagus, bottom ends trimmed off and cut into 2 inch segments
  3. 3 cupgreen beans, ends trimmed off and cut into 2 inch segments
  4. 2 cupbaby Portobello mushrooms, sliced
  5. 10 ozgolden cherry tomatoes
  6. 1/2 tspgarlic powder
  7. 1/8to 1/4 teaspoon salt
  8. 1/8to 1/4 teaspoon pepper
  9. 1/3 cupprepared pesto
  10. 2avocados, diced
  11. 1 cuppearl mozzarella

Steps

  1. 1

    Heat a large sauté pan over medium high heat for 2 minutes.

  2. 2

    Add olive oil, green beans and asparagus.

  3. 3

    Cook, stirring occasionally, for 7 minutes.

  4. 4

    Add mushrooms, tomatoes and seasonings and continue cooking for another 3 minutes.

  5. 5

    Transfer vegetables to a large bowl and let cool.

  6. 6

    Stir in pesto, avocado and mozzarella pearls and serve.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
