Just a variation of a baked potato. I think the pioneer woman did this too. I’ve made them for a long time. It’s a nice change.

I got this recipe from my aunt. This is one of the sides to serve with yellow rice (Nasi Kuning) or can also be cooked with ground beef stir fry and anchovies.

This is a simple potato dish that you can make with new potatoes or leftovers. The key is what fat you want to use. My personal favorite is bacon fat.

This is my variation of a classic hashbrown casserole (also known as funeral potatoes, but that name is a bit too morbid for the holiday table). I use a homemade condensed cream of chicken soup rather than canned for this recipe. The cornflake topping is optional, but I like the crunch that it adds to the overall texture. This can be assembled a day in advance...see step 7 for those instructions.

CRISPY POTATO GOODNESS

I made two pans of this to bring to a small Christmas party. Everyone loved it and it was gone within the first 15 minutes. People keep asking me to make it now; they even offer to buy all of the ingredients.
