Aloo Ki Tikki/ Potato Pattie

Aloo tikki is a very popular chat recipe all over India, which is made from boiled potatoes combined with little cornflour, salt, red chilli powder. serve hot by adding tamarind chutney, green chutney, sweetened curd and dry spices.
Aloo tikki crispy out side and soft inside, Some time aloo tikki is stuffed with a filling like green peas, moong dal or chana dal. here i have used dhuli moong ki dal for stuffing you can make it without filling as your choice.

Soak the dal for 1 hour. Heat the ghee in a pan add cumin seeds as they change the colour add chopped green chilli and soaked dal stir and mix. Add salt, red chilli, chat masala powder, lower the heat cover and cook the dal for 5 minutes. Switch off the gas add coriander leaves and lemon juice, Allow to cool the mixture.

Wash and boil the potatoes in pressure cooker till soft, As they little warm grate or mash well. mix cornflour, salt and red chilli with your hand, it will come together like a soft dough. Divide the mixture into equal portion stuff with dal mixture make tikki into patty shape. Keep in the fridge for 10 minutes.

Heat the skillet or tawa on medium heat add a tablespoon oil put the tikki gently. Cook till bottom side is crisp and golden brown. Flip and fry another side till crisp and brown in the colour over the slow heat. In the meanwhile mix sugar and curd keep aside

Place 2 tikki in a serving plate, drizzle the tamarind chutney, green chutney, curd, roasted cumin powder, black salt, grated radish, papdi, red chilli powder, green chilli and pomegranate seeds, serve immediately.
