Whisk egg with olive oil and sugar till nicely mixed. Mix in Nutella.

In another bowl, sieve through all dry ingredients left.

Pour the liquid mixture into this and work it into a dough.

Scoop dough, place on cookie sheet and flatten a little. If you wish, place a cashew nut in the middle of each cookie.

I use a microwave convection oven so I preheat it after preparing the dough. (your oven's temperature and time will vary) Preheat to 190°C and bake for 15- 20 minutes.
