Healthy Quinoa Salad

Made this for lunch three times this week so far, and haven't tired of it yet. :chef

Ingredients

20 mins
4 servings
  1. 1 cupquinoa
  2. 2 cupwater to boil
  3. 2beef bullion cube
  4. 2tomato
  5. 2 cuppurple onion, diced
  6. 2cucumbers
  7. 1/3 cuplemon juice
  8. 1parsley, for garnish
  9. 1garlic sea salt to taste
  10. 1pepper, to taste

Cooking Instructions

    Dice onion, cucumber and tomato

  2. 2

    Bring water, bullion cube and quinoa to a boil.

  3. 3

    Finely chop parsley while waiting.

  4. 4

    When ingredients come to a boil, cover, reduce heat and let simmer for 15 min. Or until quinoa is semi-transparent and moisture is almost gone

  5. 5

    Turn off heat and add tomatoes, parsley, cucumber and onion

  6. 6

    Drizzle lemon juice onto quinoa mixture

  7. 7

    Add garlic salt and pepper as desired

  8. 8

    Serve with a slice of grilled toast or chips if you'd like

  9. 9

    Enjoy!
