Ingredients

  1. 0.5 cupquinoa
  2. 0.5 cupbroth
  3. 0.5 cupwater
  4. 1 can (400 gm)chickpea (drained) OR soak and boil chickpea
  5. Veggies
  6. 0.5 cupbroccoli (chopped into small pieces)
  7. 1/2small onion
  8. 1small tomato
  9. 1-2cucumbers
  10. Spinach and/or other greens
  11. Dressing
  12. Mayo
  13. Creamy French

Cooking Instructions

    Wash quinoa.
    In a saucepan Take 1 portion quinoa, 1 portion broth and 1 portion water. Add broccoli in the sauce pan.
    After it starts boiling, put it on low-medium flame, and cover it.
    Once quinoa is soft in around 10 minutes, take it off the flame and keep it aside to cool. (You can also directly make the salad with hot quinoa as other ingredients are cold)

    While quinoa is cooking, dice other veggies.

    Mix the cooked quinoa, veggies, greens, etc. Top it with mayo, creamy french and other dressings of your preference.
