Grilled Taliwang Chicken

This Taliwang chicken is known for its rich spices, so when it's grilled, you can brush it with plenty of seasoning. It's delicious, and even when it's just simmering, the aroma fills the whole house. My child loves Taliwang chicken. We used to buy it from our favorite Taliwang chicken place, but since they moved and we don't know where they are now, we haven't found one that suits our taste. So, I tried making it myself, and it's even better than the one we used to eat. I got the recipe from a chicken dish cookbook, but I made it simple.
Grilled Taliwang Chicken
This Taliwang chicken is known for its rich spices, so when it's grilled, you can brush it with plenty of seasoning. Heat cooking oil, sauté the spice paste until fragrant, add kaffir lime leaves and lemongrass, sauté until the spices are cooked, add sugar and salt, mix well.

Pour in the coconut milk, mix well, then add the chicken, simmer until the chicken is tender and the sauce thickens.

Once the chicken is tender and the sauce has thickened, remove the chicken, pour the remaining simmering sauce into a bowl. If you like, you can add sweet soy sauce to the basting sauce.

Prepare a grill or skillet, grill the chicken while basting it with the remaining simmering sauce, grill while turning until cooked.

NOTE: If you like it spicy, you can replace the large red chilies with curly chilies or bird's eye chilies. I made it not spicy because it's for kids.
