This Taliwang chicken is known for its rich spices, so when it's grilled, you can brush it with plenty of seasoning. We used to buy it from our favorite Taliwang chicken place, but since they moved and we don't know where they are now, we haven't found one that suits our taste. Ingredients

  • 2.2 lbschicken pieces (I use thighs and wings)
  • 2.2 fl ozinstant coconut milk + 10 fl oz water
  • 3kaffir lime leaves
  • 2 stalkslemongrass, bruised
  • 1/2 blockpalm sugar
  • Salt to taste
  • Spice paste👇
  • 10shallots
  • 4 clovesgarlic
  • 5candlenuts, roasted
  • 0.8 inchlesser galangal
  • 3large red chilies, seeds removed
  • 1 packetABC shrimp paste

Steps

  1. 1

    Heat cooking oil, sauté the spice paste until fragrant, add kaffir lime leaves and lemongrass, sauté until the spices are cooked, add sugar and salt, mix well.

    Pour in the coconut milk, mix well, then add the chicken, simmer until the chicken is tender and the sauce thickens.

  3. 3

    Once the chicken is tender and the sauce has thickened, remove the chicken, pour the remaining simmering sauce into a bowl. If you like, you can add sweet soy sauce to the basting sauce.

  4. 4

    Prepare a grill or skillet, grill the chicken while basting it with the remaining simmering sauce, grill while turning until cooked.

  5. 5

    NOTE: If you like it spicy, you can replace the large red chilies with curly chilies or bird's eye chilies. I made it not spicy because it's for kids.
